Bucket list #11 (San Sebastian & Mugaritz). For matelskere er det en by som skiller seg ut i verden, nemlig San Sebastian. Byen er like hellig for kulinariske fanatikere som Jerusalem er for verdens religiøse og troende fra hele verden valfarter den lille spanske byen. San Sebastian har kun 186.000 innbyggere, men kan skilte med fleste Michelin-stjerner per kvadratmeter og to av verdens 10 beste restauranter, den moderne Mugaritz og den tradisjonsrike Arzak. Etter å ha testet ut 5-6 av de beste Pintxos-restauranter, gikk turen til Mugaritz, som ble kåret til verdens 6. beste i 2014. Etter en “full tasting” meny med vinpakke, dvs. 21+7 retter i løpet av 4,5 timer var dommen klar: Måltidet var en fantastisk reise hvor visuelle og kreative kunststykker kom på samlebånd med superb service. Likevel vil jeg påstå at restauranten dessverre har gått i fellen med å fokusere for mye på kreativitet og teknikk fremfor smak, hvor jeg tror et selvpålagt krav om å endre menyen hver 3. uke kan tilskrives noe av skylden. Gir full score på teknikk, kreativitet og service (6/6), men smaken får (4/6), hvor jeg kun vil gi en rett en 6’er i smak. Men anbefaler likevel å teste den for å erfare noe av det ypperste innenfor kulinarisk kreativitet og teknikk. San Sebastian, juli 2014

Bucket list #11 (San Sebastian & Mugartiz). For food lovers it is one city that stands out in the world, namely San Sebastian. The city is equally sacred for culinary enthusiasts that Jerusalem is for the world’s religious and believers from around the world flock the small Spanish town. San Sebastian has only 186,000 inhabitants, but boasts most Michelin stars per square meter and two of the world’s 10 best restaurants, the modern Mugaritz and the traditional Arzak. After testing out 5-6 of the best pintxos restaurants, we went to Mugaritz, which was voted the 6th best in 2014. After a «full tasting» menu with wine package, ie 21 + 7 dishes during 4.5 hours the verdict was clear: the meal was a fantastic journey where visual and creative art pieces came on the assembly line with superb service. Yet I will say that the restaurant unfortunately has gone into the trap of focusing too much on creativity and technique rather than taste, which I think a self-imposed requirement to change the menu every 3 weeks can be attributed part of the blame. Will give full score on technique, creativity and service (6/6), but the flavor only (4/6), where I will only give one dish a 6. But still recommend testing it in order to experience some of the best in culinary creativity and technique. San Sebastian, July 2014.
